Blueberry Angel Food Cake

Sometimes you just have to have something sweet, but you may not want
to compromise your diet too much. If that is the case, this recipe may be just the ticket for you! The great thing about this cake is it is not only low fat and greatly reduced sugar, but you get the fiber and powerful anti-oxidants of the blueberries.
Strawberries or raspberries would also go nicely here. In addition, there is no cooking involved and it is so simple a child could make it. In fact, my daughter made this one!
Ingredients:
1. 1 already made Angel Food cake. You can make it yourself, but the store bought ones are so good there is no reason to. They are also fat-free!
2 .1 box fat-free, sugar-free, Jell-O-vanilla instant pudding.
3. 2 cups low fat cold milk
4. 1 pint of fresh blueberries. (You can also add strawberries)
5. 1- 12 oz. container fat free Cool Whip topping.
6. NutraSweet or Splenda to taste.
Directions:
1. Cut Angelfood cake in ½ across to create 2 layers.
2. Mix milk with pudding for 2 minutes as directed.
3. Scoop some pudding on bottom layer, then top with blueberries and Cool Whip.
4. Sprinkle with NutraSweet or Splenda.
5. Place second layer of cake on top of first layer and top again with pudding, blueberries and Cool Whip.
6. Eat and enjoy!
